We wanted to appeal to towns and cities that were not necessarily coastal. We roast in Maitland where the Hunter River flows and felt that residents of river towns are a parochial lot and might appreciate a coffee named after their life blood - Hunter, Paterson, Barrington, Hawkesbury and so on...
